GF Christmas goodies......

AAAAHHHHH......finding a gluten free Christmas goodie in my family is like trying to find Atlantis. I got a bit fed up with this, soooo, I took things into my own hands! I made Kahlua Cheesecake Bites....OMW...these are amazing, and hit the spot when it comes to Christmas goodies. So here's the recipe!

Kahlua Cheesecake Bites:
  • 1 1/2 cups semi-sweet chocolate chips (gf)
  • 1/4 cup Kahlua or 1/4 cup coffee-flavored liqueur

     
  • 2 tablespoons butter
  • 2 eggs , beaten
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 2 (8 ounce) packages cream cheese , softened
    • DIPPING
    • 3pkgs choc chips
    • 4.5tbs shortening
    • chopped peanuts

Directions:

  1. Cut softened cream cheese into pieces
  2. Preheat oven to 350F degrees.
  3. In a small saucepan over medium heat, melt chocolate with Kahlua and butter; stir until smooth.
  4. Set aside.
  5. In bowl, combine eggs, sugar and salt; add sour cream and blend well.
  6. Add cream cheese to egg mixture; beat until smooth.
  7. Gradually blend in chocolate mixture.
  8. Pour into greased 9x9 pan and bake for 35 minutes or until filling is barely set in center.
  9. Turn off heat and let stand in oven for 15 minutes with door open; then take out of oven and let stand at room temperature for one hour.
  10. Freeze over night
  11. Cut into squares
  12. Melt chocolate and shortening
  13. Dip squares in chocolate
  14. Sprinkle with chopped nuts
  15. Freeze until ready to enjoy!
