OMG!! I feel like I've been gone forever, anybody out there miss me? Doubtful but I like to think so anyway haha :) Sooo,I'm writing this and jamming to some tunes, mostly Adele - Rolling in the Deep, awesome tune!! Okay okay, down to business. PEANUT BUTTER!! This is one of my favorite things ever, and it's gluten free, so when a sugar craving strikes where do I turn? Today it was for Peanut Butter cookies, homemade ofcourse! Oh so amazing, definately kicked that sweet spot in no time... These cookies look, smell, and TASTE like the ones my mom has made for years; except I can't eat hers anymore... Good thing I'm inventive! I can't take credit for this recipe but I also have no idea where it came from, some website hehe. Here it is:
PEANUT BUTTER COOKIES
1c peanut butter ( I like crunchy)
1c white sugar
1 egg
Preheat oven to 350 and grease cookie sheet. Mix all ingredients together in a bowl, roll 1 teaspoon size ball at a time, press down with fork in 2 directions. Bake 8-10 minutes, sprinkle with sugar and devour!!
I am here to tell of the experiences I have had while being on my gluten free journey and how I've made it thus far. I have come a long way from the start of this mayhem, to finally getting a diagnosis, and here I sit at Celiac Disease.
