Toast for two?

I finally perfected my bread recipe!! It's almost like Mom's homemade white bread, soo yummy! I toasted a piece up this am, and had a dropped egg on toast for breakfast! I haven't had that, well since I went gluten free 4 months ago! How awesome!! My other news for today, I was able to get groceries in 15 min and only spend $30!! Awesome!! Haha it's the little things I suppose,that keep me sane. I got an awesome bike ride in with Mom, got the kayak out and cleaned up for next weekend. My whole family is headed to the lake, it's my Dad and Aunt Lorie's b-days! Can't wait to get out in the water, I don't care if it rains or not!?

P.s I'm going to make a fruit pizza tonight for my friend Wanda's bday, it's GF brownie base, cream cheese and sugar topping, and covered in strawberries and blueberries....be jealous, I can't wait!! She's going to love it and she's not even GF! Later peeps :)

Here comes the rain again....

Once again it is raining here, I have the weekend off, yet feel like mother nature is sabotaging my free time. Seriously lady get a life!? Haha Oh well, this will give me a chance to rethink my homemade bread recipe. I need it to rise more, I think I'll just double it and change the flours up a little bit. We shall see, third times a charm, right!? I'm off to make some breakfast, eggs,turkey bacon, and hash browns...well as soon as my brother gets here. He's my bacon cooker lol might as well put him to work!
On a different note, I made dinner for my extended family this past week, due to an unfortunate family loss. I made my famous (locally lol) chicken lasagna totally gluten free! Awesome as always, and they thought it was the best so far, perhaps it was all the extra love I put in it lol I will post the recipe at some point soon. Have a good weekend everyone!

Do you really think I'm going to eat that?

Family dinner last night at my Great Aunt's house. God love her, she thought she was helping by not making pasta salad haha. Nevermind all of the hidden gluten in the potato salad, green salad smothered in dressing ( and the bottle was missing), pulled pork with BBQ sauce, rolls, and lemon meringue pie. Luckily I brought my own pasta and sauce pre made, knowing I wouldn't be able to eat anything she made. Best part of my night: my uncle made homemade grapenut ice cream, and saved out a dish of just vanilla for me! Good man, gotta love him! Did some bike riding with my mom tonight, man that's a workout, love it!! Well, I'm off to find a snack, have a good night all, can't wait for my day off tomorrow!! :)

Full moon much??

It has GOT to be a full moon this weekend, things just seem off! Lol So I exercised for 1.5 hours to clear my head, which works! Gotta love that you can just start a workout and put everything out of your mind, and I got enough workout in thst I could enjoy some frozen yogurt! Yum? Yes, yum! Kemp's moose tracks frozen yogurt! My favorite, I recommend it to everyone and it's gluten free! Well I'm off to watch The Middle! Have a great night everyone!!

Agh, the wide world of obliviousness ( is that even a word?)

Went to the salon this morning to for a trim and highlights, and thought I'd take my hairdresser a granola bar I had made! Which she loved, ofcourse. While there an older woman was telling me of how her friend can eat nothing but gluten free. I said I understood, she then looked at me like I had 6 heads. Haha I told her I have Celiac Disease, so I eat gluten free too. She then put the questions right to me, she wanted to know everything from shopping tips to what I ate in a regular day. I told her my favorite ice cream, which is Kemp's moose tracks frozen yogurt. ( yah yah I know it's not really ice cream)She didn't realize that you can find almost anything gluten free. This woman also is my friend's Grammie, I have a feeling we aren't done the conversation yet lol. My hairdresser was in love with the granola bar, which I posted the recipe to yesterday. She can't wait to make them, and she doesn't need to eat gluten free, just loved them! And that my friends is the key to GF living: you must find things you would eat if you weren't GF and make them GF!! things like pizza, pasta, cookies, and more! Happy cooking!

Please don't feed gluten to the Celiacs!! ;)

Holy old lovin' WHAT A DAY!?!  How many times do I have to tell a person, I have Celiac Disease I can't eat gluten?? Apparently TONS. That's fine, I understand that the world doesn't revolve around me, or at least that's what I'm supposed to think he he. I do know that my co-workers understand about my disease, I don't think they quite get what it entails. Let me explain a little, when a co-worker makes a cake or cookies and brings them in for the group I graciously decline. I decline because these goodies are not made gluten free, which is a no-no for me. When the cookie/cake baker asks why I decline because the goody is my favorite, I say," I"m sorry, unfortunately I can't eat them due to the fact that they contain gluten". They understand and go about their day, until the eating commences (2 seconds later)...which is when all common sense flies out the window and people start asking if I want one, why can't I have one, oh you can't eat that can you, what are you going to have instead? 20 questions....today was the day for 20 questions. I realize it's snippy of me to be cranky over the issue but I get so tired of constantly repeating myself! I think next time I will just make a sign and wear it around my neck. Perhaps the sign should say, " Please don't feed gluten to the Celiac" catchy huh?
Well now that I'm done ranting I can tell you about what awesomeness I came home and made, all because of my need for a little something sweet. GF granola bars, yummy! These bars are full of yummy awesomeness and are wicked healthy as well! How can you go wrong with nuts, chocolate, and peanut butter? Seriously, you can't! Shall I give out my recipe? HECK YES I WILL!! :)

Here it is: GF Granola Bar recipe by Princessandherglutenfreeness

Ingredients: ( all ingredients are GF )
1 box GF choc. chex
1-2 c almonds
1/2-1 c sesame seeds
1/2-1 c peanuts
1 c banana chips
1/2 c raisins
1-2 c craisin blueberries
1 pkg Ghiardelli milk choc chips (only milk choc is GF, check it out though)
1 c honey
1 c peanut butter

Process:

In a large mixing bowl combine all ingredients except peanut butter and honey. In a saucepan combine peanut butter and honey, mix on medium heat until a bit runny and well combined. Pour mixture over dry ingredients and mix together well. Pour contents into a greased or wax papered 13 x 9 pan, making sure the mix is well packed into pan. Refrigerate until ready to eat. Devour! Hold the gluten, please!

I have finally figured out how to make really yummy GF pizza! Bob's Red Mill pizza crust mix is quick, easy and yummy. I do find that making a GF crust takes a lot longer than making regular pizza crust, and that's okay with me. I made my crust on Friday, and saved half of it, as the recipe said to. I just made the second crust this evening, and I think it's even better than the first one! So, I'm sitting here blogging and eating pepperoni pizza and loving every minute of it. I never imagined 3 months ago that I would be able to eat pizza, I thought never again would I enjoy a slice, good thing I was wrong!! Yum, must devour pizza now!

Here's my recipe for pepperoni pizza:
(all ingredients are GF of course)
1 pizza crust mix
Contandina sauce ( or homemade if you prefer)
turkey pepperoni slices
1 Sm pkg Mexican shredded cheese

I just mix the crust as the pkg says, spread it on a greased pan, and poke it with a fork all over so it doesn't blow up like a balloon he he
The crust cooks for like 7 minutes so it sets then I put on the toppings
sauce first, followed by pepperoni and then covered in cheese
cook for another 15 min approx. let cool and devour!

How it all began...

Okay. Here I sit, wondering what in the heck I am doing. Why have I decided to write a blog, what is my thought process here lol what do I want to accomplish with all of this?? Well, let me tell you. If I can open at least one person's eyes to Celiac Disease, then I will feel accomplished. If I can get one person to see that they don't have to suffer for years and think that is just how life is, then I will feel accomplished. If I can make one person have an a-ha! moment while reading this and thinking about their friend, then I will feel accomplished. Yeah Yeah, enough of the accomplished crap, I really would like to help someone see that what they are going through can come to an end - without being hit by a truck. Sound reasonable? I think so, so listen up!
 This all began approximately when I graduated from college, I had a fabulous new job, an awesome new life to explore, and a severe bout of gut pain that was unrelenting. Two out of three ain't bad, right? Wrong, I had no idea what to do about this new found pain, except suck it up and live life anyway. I did my own research on the Internet and decided that perhaps I just had IBS, bad guts really in my terms. There was nothing I could do about it but grin and bear it, and perhaps change my diet some. So I spent the next few weeks trying to figure out just what was causing the pain, food wise. I kept a journal and was very thorough in keeping tabs on my hand to mouth actions. I did seem to find that eating things like pasta and bread seemed to cause some discomfort, but nonetheless I seemed to let it slide. My pain would come and go, and I in turn would come and go from my doctor. She had no idea as to what was causing my pain, and again suggested I keep a journal of my meals, she disregarded my earlier findings telling me that if those foods bother me then don't eat as much of them. She also said it sounded as though I had IBS, Irritable Bowel Syndrome for those that are unsure of the abbreviation. So I once again left the doctor's office, with no real answers and no testing either, being 21 I assumed she was right and went about my life as though nothing had happened.
I changed doctor's shortly after that, and as my life seemed to go I was continually told that I must have IBS. I did however have a doctor this time who would listen to me and seemed to care, but still didn't order any tests. My gut pain continued for years off and on, and it also began to progress. I now not only had gut pain, but nausea on a regular basis, and the fastest bowel transit of anyone I knew. At this point I had matured over the years, and somehow gotten used to having these issues, sad huh?
 The year I turned 27 was a rough year for me, at the beginning of the year I had been in a car crash, which then sent my system into a frenzy. I spent that whole year recovering from a shoulder injury and worsening gut issues. Towards the end of the year I began having severe pain, pain that would double me over crying. Not only had the pain gotten worse, but the nausea had as well. I was waking up every morning with nausea, sometimes I would even wake in the middle of the night to vomit. I couldn't control it except for not eating, and even then the symptoms were still there. My friends used to tease me that I had morning sickness due to my severe nausea every morning, I never found it amusing although to look back I see it as a nervous laugh more than anything. The spring of that next year was the last straw for me, I couldn't take it anymore. At this point, I had nausea every morning, I felt like I couldn't eat. If I did manage to eat, I would be nauseous instantly, then the pain would start, followed by a rapid evacuation of unprocessed food. We're talking 15 minutes time from mouth to toilet and up to 18 times a day, I wish I were kidding. I'd had it, I went to my doc, who ordered me a few tests, an Upper GI/Small Bowel study, an Ultrasound of my gallbladder and a CT scan of my abdomen/pelvis. All were negative, except the Small Bowel study. I had to drink barium while the doctor took pictures ever 30 minutes until the contrast reached my terminal Ileum. (where the small bowel meets the large bowel) Well my study took about 10 minutes to go from mouth through large bowel, it was of course abnormal due to my fast transit, and a small area of abnormal bowel. I was sent to specialist, who then ran more test ranging from a colonoscopy - blood work. I am now 3 months into a gluten free diet which I have been told I will be eating the rest of my life. My specialist says we are facing Celiac Disease, and amazingly I feel awesome now that I eat gluten free. My pain is gone, no more nausea, and I still have a fast transit, but it's much slower than before. I'm 29 now, and learning how to be gluten free and fabulous, care to join me??
